Journalist Dennis van Asselt spoke with our chef and asked him everything about Mei Wah’s menu, past and present. What are the characteristics of the South Chinese cuisine? “’My grandpa and grandma started with a Chinese takeaway in 1965,’ says Taks Yuen, who runs the business with his wife Anouk and whose mother still assists him in the kitchen. ‘Fifteen years ago, I took over from my parents.
